The bread puffed up because she forgot to score the top. I spent quite a while looking at the crust through the zoom lens, which looks a bit like the surface of the moon. Moon... cheese... bread... nevermind. The crumb has a wonderful, irregular bubble pattern, is slightly tangy, and makes for a really tasty sandwich with homemade egg salad.
